Not the Healthiest but definitely the Yummiest!

Ok so these are not the best for you but they taste so good you just have to splurge. My sister has been making these for years. It is a family loved treat. I made them today for St. Patrick's Day. The filling is usually white but I added green food colored for the kids. You can make the filling any color you like if you so choose. I might make a batch with only a few drops of red or yellow for Easter.

Ingredients:

For the cakes.

1 Cup of Sugar

5 Tablespoons of Crisco (at room temperature. I keep mine in the pantry so it is always at room temperature, but if you keep yours in the fridge you must allow it to come to room temperature.)

1 Large Egg

2 Cups of All Purpose Flour

1/2 Teaspoon of Baking Soda

1 Cup of Milk (whole, 2% or 1% is fine, whatever you have)

5 Tablespoons of Baking Cocoa

For the Filling:

3 Tablespoons of room temperature Butter. It must be at room temperature or it won't blend easily.

1/2 Cup of room temperature Crisco

1 Cup of Confectioners Sugar (also known as powered sugar)

1 Cup plus two heaping Tablespoons of Fluff

Directions:

Preheat the oven to 450 degrees F. Grease two cookie sheets.

For the Cakes - Add the sugar and crisco into a mixing bowl with paddle attachment and cream together on medium speed.

Put the mixer on low and add in the egg. Mix until combined. With the mixer on the lowest setting add in the flour 1 cup at a time and the baking soda. It is important to have the mixer on low so that one, you don't overbeat the mixture and two, so you don't get flour all over you. One the flour is combined you can increase the speed a bit but still keeping it on low/medium. Mix until combined. Note** you can and may need to use a rubber spatula to get some of the creamed sugar/crisco off the bottom of the bowl. It depends on the type of mixer you use. I have a Kitchen Aid stand mixer and I usually have to manually scrape the bottom of the bowl depending on what I am making. For this recipe I do. Next, add in the milk and once that is incorporated put the mixer back on very low and add in the baking cocoa. Mix until just combined. Do not overbeat or the cakes will come out dense.

Take a rubber spatula and mix the batter by hand until well combined. Be sure to scrape the bottom of the bowl. It should look like this.

Next use two tablespoons to scoop up the mixture and put on prepared baking sheets. I make medium sizee cakes and can get 20 half cakes (10 whole whoopie pies) from this recipe.

Bake for 7 minutes. My oven is tempermental so I bake one cookie sheet at a time on the top rack. I only use two sheets and the cooking time is short so it's not a big deal. If you have a convection bake oven then you should be able to do both at once.

Let the cakes cool on the cookie sheets for 5 minutes. Then remove with a spatula onto cooking racks and allow to cool completely before adding the filling. If you don't wait then the filling will melt.

While the cakes are cooling you can start the filling. I blend it by hand but you can probably just as easily do it in the mixer. I just don't want to have to wash the bowl and paddle attachment I just used for the cakes.

Add the very soft room temperature butter into a bowl with the room temperature crisco. Sometimes if by butter is not soft enough I cheat and put it in the microwave for 5-10 seconds and that usually gets me to where I need to be. You must watch this though as your butter can become a melted mess in no time and you don't want that. Mix the butter and crisco together with the back of a fork. Once blended add in the the confectioners sugar. Blend with the back of a fork until combined. It should look like this.

At this point you can add in the fluff. I usually by a 16 oz container and use half of it plus two heaping tablespoons. Mix in 1 cup or half the 16oz container and do a taste test. If you like a little more marshmallow flavor like I do then add in the extra tablespoons. Once you blend it in you are done and ready to fill the whoopie pies (if they are completely cooled). At this point you can add in food coloring if you like.

To fill the cakes you take one half, add on some filling with an offset spatula. If you don't have one you can use a butter knife or spoon. Then sandwhich with another half and voila you are ready to enjoy.
